The Australian government's AusAid website lists a number of government funded groups organising Australians to volunteer their skills abroad.

Be aware that it costs money to volunteer unless you get government funding. For example, after paying your airfare, volunteering to teach English at a school in Thailand costs around $3000 for one month, and that's working every school day.
